Apulia is a region in southern Italy. Its geographical location has been: Lucky in classical times because it was the natural bridge to the East. Unfortunate in subsequent periods because it was a territory subject to plundering by all Mediterranean populations. This allowed Apulia to embrace and amalgamate both Western culture and that of the entire Mediterranean basin. The culinary tradition of Apulia offers recipes with a very broad historical and geographical origin that change according to the seasons: Spring and summer with vegetables and fish. Autumn and winter with legumes, fresh pasta dressed with meat or vegetable/mushroom sauces from the region. The typical dish consists of "orecchiette" served with regional meat sauce (Brasciole) or with broccoli rabe.

Our continuous search for the best that we can serve our customers has allowed us to meet the Rachello family, owners of the mill of the same name, a Venetian company with over 120 years of history based in the Province of Treviso in the Sile River Park, the longest resurgence river in Europe. Together with them, we have developed the LUIGIA ''sack'', the type ''0'' flour for our pizza, which is the result of extensive research and the blending of 100% Italian grains, grown in the Rachello Oasis in Veneto, Friuli and Tuscany under the direct control of the mill.
The same attention is paid to the raw materials when transforming them. In fact, the dough for our pizza (identical in each of our restaurants) is matured for at least 48 hours at a controlled temperature and humidity! What is maturation? It is the set of transformations and decompositions that take place within the dough, not to be confused with simple Leavening. Leavening is the increase in mass due to the gases developed inside the dough by the yeasts. On the other hand, the right and correct maturation is fundamental to obtain the crunchiness and digestibility of the finished product that distinguish us. If the dough is not left to mature properly, the result is a pizza that may be pleasant to taste but difficult to digest. In this case, it will be our stomach that will have to replace the enzymes that usually take care of Maturation, going into overwork. In short, we prefer to be the ones to do this work, even if it is tiring, and very expensive, but we are certain that these maniacal attentions allow us to offer the best and most digestible pizza in all of Switzerland, and not only ......
We have always known tomatoes and they are part of our family history. That is why we have relied on a company that has been taking care of every detail of the process from harvesting to processing with almost maniacal attention since 1965. The tomatoes are self-produced and come from the Caserta area, the province of Benevento and Puglia.

We have selected the best: Fior d'Agerola is one of Agerola's best-known and oldest dairy farms. Its history, in fact, began in 1840 and currently the fifth generation is at work, consisting of Gennaro Fusco (from 1961), Gennaro Fusco (from 1956) and Antonio Fusco (Gennaro's brother from 56) the best known product of the Lattari Mountains. We are talking about one of the most prized dairy products, originally obtained from the Agerolose breed of cattle selected in 1845 by General Avitabile. It is a fresh pasta filata cheese made from whole raw cow's milk. The flavour is that of milk, slightly acidic, and goes perfectly with tomatoes. The two elements that characterise Fior di latte di Agerola are the use of raw milk (not only from the Agerola breed) and the acidification process, which takes place naturally and lasts about 12 hours.
They are fresh pasta filata cheeses of relatively recent origin, similar to mozzarella but with a softer, creamier texture. It was born in the province of Bari in the first decades of the 1900s and is now considered one of the most delicious specialities of Apulian cheese production. Burrata pugliese is processed by hand, creating a pouch of pasta filata that is then filled with a creamy filling of mozzarella paste and cream, called stracciatella
Grana Padano is a traditional Italian cheese made from cow's milk and produced in the valleys of northern Italy. Since 12 June 1996, the Grana Padano name has been protected at European level by a protected designation of origin. Production of the cheese in the area is constantly expanding: today, its designation covers the regions of Lombardy, Piedmont, Trentino, the province of Piacenza in Emilia-Romagna, and part of Veneto.
Pecorino Romano is a traditional cheese made from whole sheep's milk, pressed and cooked, from the territory of the regions of Sardinia, Lazio and the province of Grosseto. Since 12 June 1996, the name "Pecorino Romano" has been protected at European level by a protected designation of origin
Provolone del Monaco is a cheese made from the milk of the Agerola cow. The name derives from the cape that cheesemakers from the Sorrento peninsula who disembarked with their products in the port of Naples used to wear to protect themselves from the cold. Provolone del Monaco has been granted Protected Designation of Origin (PDO) status since 2010.
Gorgonzola is the designation of origin of a traditional blue-veined cow's milk cheese made in the regions of Lombardy and Piedmont. Since 12 June 1996, the "Gorgonzola" designation of origin has been preserved at the European Union level by a protected designation of origin (PDO) The milk obtained was then transformed into a cheese with a marbled character by maturing in natural rock cavities rich in specific mould strains (such as Penicillium glaucum)
Ricotta (Italian for 'twice cooked') is the common name for a dairy preparation of Italian origin of fresh cheese available in almost all regions of Italy. Although ricotta is a dairy product, it is not a cheese, but should be classified simply as a dairy product: in fact, it is not obtained through the coagulation of casein, but of whey proteins, i.e. the liquid part that separates from the curd during cheese-making. The whey protein coagulation process takes place by heating the whey to a temperature of 80-90 ยฐC. The proteins involved are in particular albumin and globulin.
Ricotta salata (salted ricotta cheese) is a traditional Italian cheese, which originated in Greek cuisine. It is particularly popular in the province of Catania, where it is used instead of grated cheese to make the famous pasta a la norma, a typical Catania dish. Salted ricotta is made according to the traditional ricotta method, but instead of being put in a vat of fresh cheese, it is salted and left to rest for ten and a half days.
